Ingredients
  • 3-5 Lbs. Bone-In Chicken
  • 1-2 Tbps. Olive Oil
  • 1 tsp Salt
  • ½ tsp Pepper
Instructions
  1. Preheat the oven to 400°F:
  2. Pat the chicken dry using paper towels and transfer to a mixing bowl.
  3. Toss the chicken with olive oil, salt, and pepper.
  4. Transfer the seasoned chicken pieces to a baking sheet.
  5. Bake for 20 to 30 minutes until meat registers at least 165°F in the thickest part.

Meal 5 – Shrimp Scampi


Shrimp Scampi
 
Ingredients
  • 1 Lb. Shrimp
  • 2 Tbsp Olive Oil
  • 3 Tbsp Butter
  • Salt
  • 1 Tbsp Minced Garlic
  • ¼ tsp Red Pepper Flakes (optional)
  • ½ Cup Dry White Wine
  • 2 Tbsp Parsley
  • Pepper
  • 1 Tbsp Lemon Juice
Instructions
  1. Prepare pasta according to package directions.
  2. Meanwhile, saute garlic and red pepper flakes in butter and oil over medium high heat for about 1 min.
  3. Add shrimp and wine and stir till shrimp is well coated. Cook, stirring occasionally for 3-5 min on medium heat.
  4. Remove from heat. Toss with parsley, lemon juice and pepper and serve over pasta.

Slow Cooker Rump Roast
 
Ingredients
  • 2-3 Lb. Beef Roast
  • 5-6 Potatoes, peeled and sliced into wedges
  • 1 Bag Baby-Cut Carrots
  • 2 Medium Onions, cut in half
  • 2 Packets Gravy Mix
  • 2 Cups Water
Instructions
  1. Place roast in 6 quart slow cooker. Surround roast with potatos, carrots and onions.
  2. Mix one packet of gravy mix with water, and pour over roast and veggies.
  3. Cover and cook on low for 8-10 hours.
  4. An hour before serving, mix second packet of gravy with water and pour over roast.
  5. Cover and cook for remaining hour.

  • Potatoes, scrubbed clean and dried
  • Olive Oil

Instructions
  1. Preheat oven to 450ºF.
  2. Cut potatoes into matchsticks.
  3. Spray baking sheet with non-stick spray.
  4. Add fries and drizzle with oil, salt, pepper and garlic powder. Toss to coat.
  5. Arrange fries in single layer and bake for 25-35 min, flipping once halfway through.
