Happy New Year! What better way to kick of the New Year than with an under budget meal plan? 

As always, keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CashWiseDelivers.com. However, if you’ve been following along with us, then this week of meal planning is sure to give you 7 meals for a family of four all for under $75! That’s an awesome amount of savings! MEAL ONE: Cheese ‘N Rice Quesadillas

These quick and easy quesadillas are sure to be a hit.

Cheese 'N Rice Quesadillas

Ingredients
  • 2 Cups Water
  • 1 Tbsp. Butter
  • 1 Package Knorr Fiesta Sides Mexican Rice
  • 1 Can (4 oz.) Chopped Green Chilies, drained (optional)
  • 10 (6-in.) Flour Tortillas
  • 1¼ Cups Shredded Monterey Jack Cheese
Instructions
  1. Bring water, Spread, Knorr Fiesta Sides Mexican Rice and chilies to a boil in medium saucepan.
  2. Reduce heat to low and simmer uncovered, stirring occasionally, until rice is tender, about 10 minutes. Let stand 10 minutes.
  3. Place 5 tortillas on baking sheet. Top tortillas with rice mixture, then cheese and another tortilla.
  4. Broil until tortillas are lightly toasted and cheese is melted, turning once.
  5. Cut each quesadilla into 4 wedges and serve, if desired, with guacamole, sour cream and/or chopped fresh cilantro.

MEAL TWO: Crunchy Onion Chicken

This recipe is also super easy and tastes amazing!

Crunchy Onion Chicken
 
Ingredients
  • 4 Boneless, Skinless Chicken Breasts
  • 1 Package Lipton Onion Soup Mix
  • 1 Cup Cried Bread Crumbs
  • ⅔ Cup Mayonnaise
  • ¼ Cup Butter
Instructions
  1. Preheat oven to 425 degrees.
  2. Place foil into a 13×9 pan and spray with pam.
  3. Combine soup mix and bread crumbs in a shallow dish.
  4. Add mayonnaise to a separate shallow dish.
  5. Place butter into foil lined pan and put in oven to melt.
  6. While butter is melting, toss chicken in mayonnaise mixture then press each breast into onion/breadcrumb mixture. Place chicken into melted buttered pan.
  7. Bake at 425 degrees for 20 minutes. Turn chicken over and bake for 10 minutes more.
  8. Remove from oven and let rest for 5 minutes before serving.

Ingredients
  • 1 Lb. Boneless, Skinless Chicken Thighs, cut into chunks
  • 2 Tbsp. Olive Oil
  • 1 Medium Onion, sliced into ½-inch thick pieces
  • 1 Clove Garlic, finely chopped
  • ¼ Cup Sliced Carrots
  • 3 Medium Zucchini and/or Yellow Squash, cut into thirds
  • 5 Green Onions, sliced into 2-inch pieces
  • ¼ Cup Cherry Tomatoes
  • 2 Cups Boiling Water
  • 1 Package Knorr Rice Sides Chicken flavor
Instructions
  1. Preheat oven to 400°.
  2. Season chicken, if desired, with salt and pepper. Heat oil in deep, large skillet over medium- high heat and brown chicken. Add onion and garlic and cook, stirring occasionally, until onion is almost tender, about 4 minutes. Stir in carrots, zucchini and green onion and cook, stirring occasionally, an additional 5 minutes.
  3. Combine boiling water with Knorr Rice Sides Chicken flavor in 13 x 9-inch baking dish. Stir in vegetables and chicken. Cover tightly with aluminum foil.
  4. Bake 30 minutes or until chicken is thoroughly cooked and rice is tender.

Quick Tuna Casserole

Ingredients
  • 2 Packages Knorr® Pasta Sides™ - Butter flavor
  • 4 Cups Water
  • 2 Tbsp. Butter
  • 16 Oz. Bag Frozen Mixed Vegetables, partially thawed
  • 2 Cans (5 oz.) Tuna, drained and flaked
  • 1 Cup Shredded Cheddar Cheese
Instructions
  1. Bring water and butter to a boil in 6-qt. saucepan.
  2. Stir in Knorr Pasta Sides Butter flavor. Continue boiling over medium heat, stirring occasionally, 4 minutes.
  3. Stir in vegetables and tuna. Continue boiling over medium heat until vegetables and pasta are tender, about 4 minutes.
  4. Turn into serving dish, then top with cheese.
