MEAL ONE: Chow Mein & Egg RollsMeal Plan Day 1

Starting the week off right with this tasty meal!

What You’ll Need:

MEAL TWO: Baked Chicken Breast & Sweet Baby CarrotsMeal Plan Day 2

This sweet baby carrot recipe goes great with baked chicken. Try adding a few more of your family’s favorite veggies.

Baked Chicken Breast
 
Ingredients
  • 4 Lb. Bone-in Chicken Breasts, Thighs, Drumsticks and Wings
  • ¼ Cup Unsalted Butter at room temperature
  • 2 T. Minced Garlic
  • Salt and Pepper
  • 4 T. Olive Oil
  • 2 tsp. Tarragon, crushed (optional)
Instructions
  1. Heat oven to 450°F or 425 for convection. Prepare a baking pan with aluminum foil and a baking rack coated with cooking spray.
  2. In a small bowl, combine the butter and 1 teaspoon salt. Add garlic and tarragon. If desired, add other herbs or other flavorings to the butter. Combine.
  3. Season both sides of the chicken breasts with salt and pepper. Using your finger, carefully loosen the skin from the meat to create a sort of pocket and slide the butter underneath the skin, into it. Using your finger or the back of a spoon, carefully spread the butter evenly under the skin of each piece. Rub the skin of each piece with olive oil.
  4. Place the breasts on the rack and bake until the skin is golden brown and the meat is cooked through, 35-45 minutes. Remove from oven and let the chicken rest for 5 minutes. Serve immediately

Sweet Baby Carrots
 
Ingredients
  • 2 T. Unsalted Butter
  • 1 Lb. Baby Carrots
  • 2 T. Honey
  • 2 T. Brown Sugar, packed
Instructions
  1. Melt butter in a large skillet over medium heat.
  2. Add carrots, honey, brown sugar and gently toss to combine.
  3. Cook, stirring occasionally, until carrots are tender, about 15 minutes; serve immediately.

MEAL THREE: 5 Ingredient Chili & CornbreadMeal Plan Day 3

Nothing says comfort food quite like a nice hot bowl of chili.

5 Ingredient Chili
 
Ingredients
  • 1 lb. Ground Beef
  • ½ Jumbo White Onion, diced
  • Three 14.5 Oz. Food Club Diced Tomatoes with Green Chilies
  • Two 15 Oz. Food Club Black, Chili or Kidney Beans, your choice
  • 2 T. Chili Powder
  • Optional Toppings: shredded cheese, chopped green onions, sour cream, cilantro, etc.
Instructions
  1. In a large stockpot, cook ground beef or turkey over medium-high heat until browned, stirring frequently.
  2. Using a slotted spoon, transfer the cooked beef or turkey to a separate plate and set aside.
  3. Reserve 1 tablespoon of grease in the stockpot, and discard the rest.
  4. Add the onion to the stockpot and saute for 4-5 minutes, or until soft.
  5. Add remaining ingredients and the cooked beef or turkey to the stockpot, and stir to combine.
  6. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10 minutes.
  7. Serve immediately, garnished with optional toppings if desired.

MEAL FIVE: Pork Back Ribs With Smashed PotatoesMeal Plan Day 5

Ribs can be prepared several ways, all of which are delicious! Especially when paired with this awesome smashed potato recipe!

Weekly Meal Planning (1/22 – 1/28)

Ingredients
  • 2 Lbs Baby Red Potatoes
  • 1⁄4 Cup Salt
  • 1⁄4 Cup Salted Butter, melted
  • 1⁄2 tsp Black Pepper, freshly ground
  • 1⁄2 tsp Garlic Powder
  • 1⁄2 tsp Onion Powder
Instructions
  1. Preheat oven to 375°F.
  2. Place potatoes in a large pot, and fill pot with enough hot water to cover potatoes.
  3. Bring to a boil over high heat. Add salt and boil for 15-20 minutes or until potatoes are fork-tender.
  4. Once tender, drain water from potatoes. Set aside to cool slightly.
  5. Place butter in a 9 x 13 inch baking dish and place in oven for 1 minute or until butter is melted. Remove from oven and stir in pepper, garlic powder and onion powder.
  6. Using the curved back side of a fork and a cutting board, gently press potatoes to "crush" them. The "crushed" potatoes should break open but not apart too much.
  7. Gently dredge both sides of each crushed potato in butter mixture in pan and arrange in one layer.
  8. Roast for 15-20 minutes or until crisp and golden brown.

MEAL SEVEN: Crispy Pan Roasted ChickenMeal Plan Day 7

Weekly Meal Planning (1/22 – 1/28)

Ingredients
  • 4 Lb. Bone-in Chicken Breasts, Thighs, Drumsticks and Wings
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • 2 T. Coconut Oil
Instructions
  1. Preheat oven to 425 degrees.
  2. Lay out chicken thighs and trim off any extra skin. Cover the skin of the chicken with a desired amount of kosher salt and black pepper.
  3. In a large (oven safe!) skillet set over medium heat add coconut oil. Let the oil melt and get hot. Once the oil is hot add chicken into the skillet, skin side down. The oil needs to be hot enough so that when you place the chicken into the oil it sizzles.
  4. Let the chicken cook for 10 minutes. After 10 minutes place the chicken in the oven for another 5 minutes. After 5 minutes flip the chicken and cook for another 10-12 minutes or until the chicken is fully cooked to an internal temperature of at least 165°F.
  5. Remove the chicken from the oven and let it rest for a few minutes before serving.
