Welcome back to another week of meal planning. We have even more great recipes this week that will win over the whole family! 

As always, keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. MEAL ONE: Crock Pot Pork Roast

Meal Plan Day 1

Crock pot recipes are the best! Start it in the morning and it’s ready when you get home. Doesn’t get much better than that!

Crock Pot Pork Roast
 
Ingredients
  • 1.5 Lb. Pork Roast
  • 1 (1 oz.) Envelope Dry Onion Soup Mix
  • 1 Cup Water
  • ¾ Cup Beef Broth
  • 3 T. Soy Sauce
  • Black Pepper to Taste
  • 2 T. Minced Garlic
  • 1 Lb. Baby Carrots
Instructions
  1. Place pork roast in slow cooker and top with onion soup and water.
  2. Add in beef stock and soy sauce. Mix well and turn to coat.
  3. Surround Pork Roast with baby carrots.
  4. Top with minced garlic. Spread over top of roast.
  5. Cook on high for 5 hours. (about 4 hours in start basting a little with the sauce and with about 10 minutes left flip and mix in the garlic)
  6. Remove roast from cooker. Slice pork and serve with sauce.

MEAL TWO: Roasted Split Chicken Breast

Meal Plan Day 2

Pair this chicken with your family’s favorite vegetables.

Roasted Split Chicken Breast
 
Ingredients
  • 2 Lbs. Bone-In Split Chicken Breasts
  • 3 T. Olive Oil
  • 3 T. Lemon Juice
  • 1 T. Lemon Pepper
  • 2 tsp. Salt
Instructions
  1. Wash and pat dry chicken breasts and place in shallow pan.
  2. Drizzle olive oil over chicken.
  3. Sprinkle with lemon juice.
  4. Generously add lemon pepper and salt.
  5. Roast uncovered in a 350° oven for 1 hour, basting with its own juices at 30 minutes.
  6. Let rest for 10-15 minutes before cutting. Should reach an internal temperature of at least 165°F.

This taco bake is definitely something the whole family will enjoy.

Taco Bake Casserole
 
Ingredients
  • 14 Oz. Deluxe Macaroni & Cheese Dinner
  • 1 Lb. Ground Beef
  • 1 Oz. Taco Bell Taco Seasoning Mix
  • ¾ Cup Sour Cream
  • 1.5 Cups Shredded Cheddar Cheese, divided
  • ¾ Cup Salsa
Instructions
  1. Heat oven to 400°F.
  2. Prepare Dinner as directed on package. While Macaroni is cooking, cook meat with taco seasoning as directed on package.
  3. Stir sour cream into prepared Dinner. Spoon half the Dinner mixture into 8-inch square baking dish sprayed with cooking spray; top with layers of meat mixture, 1 cup shredded cheese and remaining Dinner mixture. Cover.
  4. Bake 15 min.; top with salsa and remaining shredded cheese. Bake, uncovered, 5 min. or until cheese is melted.

Another great chicken recipe that is super easy to make.

Easy Baked Honey Garlic Chicken
 
Ingredients
  • 3-4 Lbs. Chicken Leg Quarters, skin on
  • 4 Cloves Garlic, minced
  • ¼ Cup Honey
  • 2 Tbsp Dark Soy Sauce
  • 1 Tbsp White Vinegar
Instructions
  1. Heat oven to 400°F degrees F. Line a baking dish with aluminum foil (optional); set aside.
  2. Layer chicken legs on baking dish. In a small bowl combine garlic, honey, soy, and vinegar. Whisk until fully combined. Pour mixture onto chicken legs, coating evenly.
  3. Bake 40-45 minutes or until skin is crisp and caramlized and chicken is cooked through.

This Cranberry Pork Recipe is absolutely delicious!

Crockpot Cranberry Pork
 
Ingredients
  • 1.5 Lb. Pork Roast
  • 14 Oz. Whole Berry Cranberry Sauce
  • ¼ Cup Honey
  • 1 Tbsp Dried Minced Onion
Instructions
  1. Combine all ingredients except for ½ can of cranberry sauce into slow cooker and cook on low for 6-8 hours or until pork shreds easily with a fork.
  2. Add some of the liquid left in the slow cooker into the remaining can of cranberry sauce to make a nice sauce for the top of the cranberry.
  3. Serve pork with cranberry sauce on top.
