MEAL ONE: Hawaiian Chicken Bake With RiceMeal Plan Day 1

Give your family a taste of the Islands with this delicious recipe.

Hawaiian Chicken Bake
 
Ingredients
  • 3-4 Boneless, Skinless Chicken Breasts
  • 6-12 Tbsp Barbecue Sauce
  • 1 Fresh Pineapple
  • 6 -8 Slices Provolone Cheese
Instructions
  1. Lay the chicken breast flat in a baking dish.
  2. Spread 1-2 Tbsp of BBQ sauce on each chicken breast.
  3. Remove rind and core of pineapple and cut into slices.
  4. Place 2 pineapple rings on each chicken breast.
  5. Layer 2 slices of cheese on top of the pineapple on each chicken breast.
  6. Place in preheated oven at 375˚F for 20 minutes, lightly covered with foil. Then remove the foil and continue to bake for 15-25 minutes or until the chicken is no longer pink and the juices run clear.

Green Bean Casserole
 
Ingredients
  • 10.5 Oz. Can Condensed Cream of Mushroom Soup
  • ¾ Cup Milk
  • ⅛ tsp. Black Pepper
  • Two 14.5oz Cans any style Green Beans, drained
  • 1⅓ Cups Crispy Fried Onions
Instructions
  1. Mix soup, milk and pepper in a 1½ -qt. baking dish. Stir in beans and ⅔ cup Crispy Fried Onions.
  2. Bake at 350°F for 30 min. or until hot. Stir.
  3. Top with remaining ⅔ cup onions. Bake 5 min. until onions are golden.

Ingredients
  • 2 Cups Sour Cream
  • ⅔ Cup Chunky Salsa
  • ¾ Cup Red Onion, chopped
  • ½ Cup Chopped Ripe Olives
  • 2 T. Fresh Cilantro, chopped
  • ½ tsp. Salt
  • ¼ tsp. Garlic Powder
  • 10-inch Flour tortillas
  • 2 (10-ounce) Can HORMEL® Premium Chicken Breast, drained
Instructions
  1. In bowl, combine sour cream, salsa, onion, olives, cilantro, salt and garlic powder; mix well.
  2. Spread about ½ cup sour cream mixture over each tortilla; top evenly with chicken. Roll tightly; wrap in plastic wrap. Refrigerate several hours or overnight.
  3. Unwrap chilled rollups and serve.

Chicken Waffle Sliders
 
Ingredients
  • 10 Frozen Round Waffles
  • 1 Lb. Chicken Tenders, cooked
  • ¼ Cup Pancake Syrup
  • 12 Toothpicks
Instructions
  1. Slice cooked chicken fingers into 3-4 pieces each.
  2. Cook waffles in the toaster or microwave according to package directions.
  3. Cut cooked waffles into quarters.
  4. Sandwich 1 piece of chicken between 2 waffle quarters.
  5. Secure with toothpick.
  6. Drizzle with maple syrup and serve warm.

Baked Chicken Breast
 
Ingredients
  • 4 Boneless, Skinless Chicken Breasts
  • Olive Oil
  • Salt & Pepper
  • (Optional) Other Seasonings: Rosemary, Parsley, Oregano, Thyme, etc...
Instructions
  1. Preheat oven to 325ºF. Line large baking dish with foil.
  2. Pat boneless skinless chicken breast dry with paper towel, and place in baking dish. Lightly drizzle with olive oil and sprinkle with salt and pepper (or other seasonings or your choice). Rotate chicken breasts and repeat for other side.
  3. Bake 25–35 minutes, until internal temp reaches 165º with a digital instant read thermometer and is no longer pink inside.
  4. Remove from oven and let sit a few minutes before serving.
