Meal 1 – Chili & Corn Bread


Easy Chili
 
Ingredients
  • 1½ Lb. Lean Fround Beef
  • 1 Onion, chopped
  • 1 Small Green Bell Pepper, chopped
  • 2 Garlic Cloves, minced
  • 2 (16-Oz.) Cans Red Kidney Beans, rinsed and drained
  • 2 (14-1/2-Oz.) Cans Diced Tomatoes
  • 2 to 3 Tbsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Ground Cumin
Instructions
  1. Cook beef, onion, pepper and garlic in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain.
  2. Place mixture in 5-quart slow cooker; stir in beans and remaining ingredients.
  3. Cook at high 3 to 4 hours or at low 5 to 6 hours.
Notes
If you want to thicken the chili, stir in finely crushed saltine crackers until the desired thickness is achieved.

Meal 5 – Easy Chicken Parmesan


Easy Chicken Parmesan
 
Ingredients
  • 24 Oz. Pasta Sauce
  • 6 Tbsp Grated Parmesan Cheese
  • 6 Small Boneless Skinless Chicken Breasts
  • ¾ Lb. Spaghetti, uncooked
  • 1½ Cups Mozzarella Cheese, shredded
Instructions
  1. Heat oven to 375F.
  2. Pour sauce into 13x9 baking dish sprayed with non-stick spray. stire in ¼ cup Parmesan. Add chicken; turn to evenly coat with sauce. Cover.
  3. Bake 30 min. or until chicken is done. Meanwhile, cook spaghetti according to package directions.
  4. Top chicken with remaining cheeses, bake uncovered an additional 5 min to melt cheese.
  5. Drain spaghetti, serve topped with chicken and sauce mixture.
